When I’m absolutely craving some sweetness and I want something now, this handy little recipe is great for such occasions! It’s a nice light and fruity sponge cake, which is nice served with cream.
Ingredients:
- 3/4 cup of SR flour
- 1/4 cup semolina
- 1 tbs butter or margarine
- 1 tbs olive oil
- pinch salt
- 1/3 cup brown sugar or sweetener
- 2 tsp baking soda
- 1tbs jam (for fruity filling)
- cream to serve
- milk to smooth out mixture
Serves:
- 2 to 3 people
Instructions:
- Mix dry ingredients thoroughly.
- Rub butter in with dry ingredients.
- Add oil and milk, mixing to a smooth cake consistency.
- Add jam into mixture softly and don’t combine, so when cooked you have little parts of jam in your cake.
- Place in a high rised plastic container / bowl and cook on high for max 6 mins. Cook until sponge has risen and is firm but bouncy on top.
