banana walnut cake

I’m trying to create some cakes that are low in calories here and although this is a little soft on the inside (it was better the day after). It’s not a bad start. This also has the bonus of not having any eggs in this.

Ingredients:

0.80 chopped, 1/4 cup (28.4g) of Nuts: Walnuts, English or Persian 149
1/2 cup (120g) of Brans & Oats: Rolled Oats, dry, raw 226
3 level tablespoon (8g) of Cocoa Powder: Cocoa Powder, unsweetened, dry 55
0.30 cup (218g) of Oils: Olive 579
1 small (120g with skin) (80g) of Fruit, fresh: Banana, Common, without skin 71
1 unsifted, 1 cup (155g) of Flours: White Flour, Self-Raising 527
1 teaspoon (5g) of Baking Products: Bi-Carbonate Soda 0
1 cup (250mL) of Anlene: Milk: Anlene, Milk, 98.6% fat-free 138
1/2 1 cup of splenda 48
1/2 cup (250mL) of Water: Water 0
Total 1792

Serves:

  • 16
  • 112 calories per serve

Instructions:

  1. Blend oats and walnuts together and mash banana
  2. mix dry ingredients together and wet ingredients seperately. Combine the two.
  3. Preheat oven to 180 degrees celsius
  4. grease cake loaf pan and empty ingredients in pan
  5. Cook for 40 mins on 160 degrees celsius, cook longer for dryer cake
  6. Leave for 10 mins before emptying

Optional:

  • Icing of 2 tbs brown sugar, 1 tbs butter softened & 1 tbs cocoa can be placed on top (shown inpicture)
