first day of bento and easi yo yoghurt making…

Yesterday I made some easi-yo yoghurt for the first time! A lot of first timers today! I was surprised at how low in calories it is and can’t wait to taste it. I’ve sweetened it with stevia (which has no calories).
Today’s bento was a little hard due to being up late last night and also getting up early this morning. Here’s a photo of my first efforts:

The haloumi is pan fried with Fry’s 1 calorie per spray oil. The mushrooms, lentil and spinach is created with a mixture of cumin, coriander, ginger, garlic, lemon juice, salt and pepper. I decided to use the drink container today to put my home-made yoghurt in and it’s delicious! Sweet enough with Stevia and no extra calories. I cut the fuji apple to fit and included some asparagus to steam on the side. Can’t wait to eat it!
Today’s menu:
- breakfast: 3/4 cup rolled oats, 25 grams protein powder
- lunch: 75 grams lentil, 1/2 cup mushrooms, 4 medium asparagus, 50 grams baby spinach, 30 gram haloumi
- dinner: Sanitarium Vegie Schnitzel, red onion 1/4, 0.25 cup capsicum, chilli, mustard, garlic, medium potato
- snacks: fuji apple medium, 1 skinny latte, 200 grams easi-yo yoghurt vanilla with stevia
- drinks: water, coffee, sugarfree v
- calorie intake: 1277 calories

Getting up after a late night was a little hard, but well worth it…
