Mediterranean Pasta

This inspired dish came from wanting to cook some artichoke with chillies. I’m not entirely sure how I came up with the ingredients but it’s a nice spicy dish that’s not your average pasta meal.

Serve with a salad or steamed vegies.

Ingredients:

  • 250 grams haloumi, diced into cubes
  • 1 can artichokes, cut roughly
  • 1 tbs pine nuts
  • pinch chilli (to your taste)
  • 5 or 6 marinated olives, chopped roughly
  • 2 slices bread cubed and toasted
  • 1 tsp garlic
  • pinch salt (optional, based on saltiness of haloumi)
  • 160 grams farfalle pasta
  • drizzle of extra virgin olive oil at end to combine together

Serves:

  • Three to four

Instructions:

  1. Place chilli, garlic and pine nuts with artichokes and heat together in saucepan softly.
  2. In a separate pan, cook cubed haloumi until brown. Sit aside.
  3. Cook pasta for 10 mins or until ‘al dente’. Drain.
  4. Once artichokes warmed through, combine toasted bread and mix. Then add haloumi.
  5. Combine pasta and artichoke mixture well. Add olives and drizzle olive oil through.
  6. Mix and serve!
