A Healthy Gado Gado Salad

Peanuts! Now usually something with peanuts, would be high in calories!  At only 271 calories, this recipe is quite low in calories but doesn’t lack in flavour!  It’s a great salad to have vegetables you don’t normally get to eat at lunch!  Well worth the effort!

If you cook this the day before, seperate the warm ingredients from the cool ones and reheat them in the microwave before serving together!

Serves:

  • 1 serve

Ingredients:

  • 1 egg boiled
  • 50 gram bean sprouts
  • 1 cup wombok cabbage (75 grams), rougly cut to mouth-size pieces
  • 50 gram green beans
  • 128 grams potato, cut into smaller pieces leaving the skin on

Peanut Sauce

  • 1/2 tsp peanut butter
  • 1/2 tsp soy sauce
  • 1/4 tsp garlic mince
  • 2 tbs lime juice
  • 4 tbs water
  • 1/2 red chilli, deseeded and chopped fine
  • pinch white pepper

Instructions:

  1. Boil the egg and in the same pot, steam your potatoes and beans.
  2. Mix the sauce together and heat in a microwave for thirty seconds.
  3. Once the egg has cooked and cooled a little, cut it into quarters.
  4. Place the bean sprouts, potates, beans and cabbage in a bowl and mix.
  5. Pour the sauce over the top before serving.

271 calories, protein 14.7g, carbohydrate 39.2g, fat 7.1g, saturated fat 1.6g, fibre 7.9g, salt 0.832 g
