I was meaning on making a baked polenta dish that was a little different to this, but my dad purchased the polenta for me. Rather than getting the raw version, he purchased the ready made one and I needed to come up with something different, hence the baked polenta lasagne.
Now if you can find the ready-made version, it’s not hard to make some slabs of polenta up to use instead. Simply mix it in pan to cook, then pour into a tray, smoothing the mixture and allow to firm by sitting aside. Once it’s cool, you’ll have some flat slabs ready for the dish!
Serves:
- eight
Ingredients:
- 1 slap of ready made polenta (500 grams cooked)
- 100 grams mozzarella cheese
- 3 tbs parmesan cheese grated
Sauce
- 1 tin tomato
- 1 chilli
- 1/2 red onion
- 2 tsp garlic
- white pepper
- salt
- 1 tsp dried basil
Instructions:
- Preheat oven to 180 degrees C or 360 F.
- Vitamise all the ingredients for the sauce in a blender.
- Grab a tray and layer a little of the sauce down, adding the polenta on top.
- Slice the mozzarella into thin pieces and layer on top of the polenta.
- Layer another layer of sauce on top and repeat with some more polenta, then tomato.
- Add your mozzarella again and sprinkle some parmesan on top.
- Place in the oven for 1 hour.
- Allow to cool for five minutes before slicing and serving.
