I love Winter because you can always warm yourself with a nice comforting soup! This one here is one worth trying for the unique flavours that bring out the borlotti bean themselves. It has a little hint of paprika, sage and tahini that compliments the borlotti beans and is made delicious with a couple of parmesan-topped toast.
This soup is also very quick to make, empty the contents of a can of borlotti beans, add a few spices and pour in some water to simmer and you have your soup in half an hour with minimal work involved!
Serves:
- Two
Ingredients:
- 1 can borlotti beans
- 1 tsp tahini
- 1 tsp paprika
- 1 tab of porcini stock
- 1 tsp sage
- white pepper
- 2 tsp garlic mince
- 1 tsp onion flakes
- 4 cups water
Instructions:
- Pour all the ingredients into the pot and wait for boil.
- Bring to a simmer and stir occasionally for around 30 minutes. If you need to add some more water in this time, add half a cup at a time.
- Grab your blender and blitz the soup roughly. This way you get some chunky beans still with the soup but a blended down consistency.
- Serve with a dollop of cream fraiche or vegan sour cream on top.
