Bruschetta Pizza Subs

Although this is quite simple to make, it’s a really enjoyable meal that I wanted to share with you all.  You can make it as a snack for yourself for lunch or get away with serving at a dinner party as some appetisers.

There’s not much preparation at all, as the bruschetta mix can be found in the most delis, but if you do get stuck, it’s a combination of marinated olives, peppers, chillis, tomato and artichokes minced down (which you could easily make yourself).   Drop some fresh cheese on top and you have yourself a very quick snack!

You could easily swap the ingredients around on the subs to make your own pizza-style sub, but I really do think these are the best thing around!

To veganize this, leave the cheese off and subsitute with some breadcrumbs mixed with nutritional yeast or use your favourite vegan cheese!

Serves:

  • 12 subs (2 subs each) - 6 serves

Ingredients:

  • 6 subs or dinner rolls
  • 1 tsp each roll  of bruschetta mix from the deli
  • 1 garlic clove
  • drizzle extra virgin olive oil for each roll
  • reggiano cheese

Instructions:

  1. Preheat oven to 220 degrees celsius.
  2. Cut the dinner rolls in half and the garlic clove also in half.
  3. Rub the garlic clove onto the roll and drizzle with a little olive oil.
  4. Grab a dollop of bruschetta mix and rub onto the sub, covering it.
  5. Grate some reggiano cheese on top.
  6. Place all subs on a tray and put in the oven for 5-8 mins (until cheese has melted on top).
  7. Serve straight away!
