Bulghur Chickpea Patties

I guess when anyone hears the word diet, you don’t really think of something tasting great.  Something always gotta give if you are on a diet - flavour or actually feeling like you’ve eaten something more than a lettuce leaf!

If I didn’t tell you these were low in calorie patties, you wouldn’t even know!  Full of nuttiness and vegetables, these are based on the Soy Zone burgers with some minor changes.  There’s absolutely no flour needed and very little oil because they are oven-baked.

There also great for vegans and add a dash of home-made barbecue sauce on top and you have a mean burger that won’t increase your belly size!

Makes:

  • 8 burgers

Ingredients:

  • 1/2 cup uncooked bulghur
  • salt
  • pepper
  • 2 tbs peanut pieces
  • 1 cup water to boil bulghur
  • 1 tsp cumin powder
  • 1 can chickpeas mashed
  • 1 tbs egg replacer with 1 tsp water mixed
  • 1 tsp paprika
  • 1/4 carrot grated
  • 1/4 onion grated
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • cooking spray for lining tray

Instructions:

  1. Preheat the oven to 180 degrees C or 375 F.
  2. In a big jug, mix the bulghur in with boiling water, for 20-30 minutes until the mix has expanded and there’s very little water left.  You may want to add some more water if the bulghur takes most of it in quickly.
  3. Into the jug, pour all the ingredients and mix thoroughly.
  4. Grab a tray and using some cooking spray oil, line the tray.
  5. Using your hand, grab some mixture and mould between your two hands.  The patties should be fairly thick.
  6. Add to your tray and repeat.
  7. Place into the oven and allow to go golden brown, before turning.
  8. After 45 minutes, your burgers are ready.  If you’d like them harder, quick them in another 15 minutes before serving with salad, roll and that lovely barbecue sauce of your choice!

  • You posted this recipe at a good time! I’ve been trying to use up some of the grains, pasta, etc sitting in the bottom of the pantry and yep, there was bulghur in there.

    We tried the burgers and liked them a lot! They stuck to the baking tray a bit, but some extra oil next time would probably help.
