Recipe: Cherry tomatoes and basil fettucine

I have to thank Masterchef for this little recipe. I got the idea of the show last weekend, after Hannah who over complicates her dishes was taken to a very famous Italian restaurant in the UK. She was taken there to show how four simple ingredients can make a delicious meal. They didn’t actually show the recipe, but I thought “why not?” and attempted this last night for a dinner at my relatives. It went down so well, I decided to make it again tonight for tea, so I could throw the recipe up here for you all to enjoy.

Four simple ingredients? Who would’ve thought that something so simple, is a popular dish at the five star restaurant and that it is SO delicious! Definitely one that you must try!

Serves:

  • 4- 6 serves (depending on size)

Ingredients:

  • 250 grams cherry tomatoes, cut in halves
  • 3 cloves garlic, chopped finely
  • 1 chilli, deseeded and chopped finely
  • bunch basil
  • 250 grams fresh fettucine pasta, cook beforehand
  • salt
  • pepper
  • 1-2 tbs olive oil for cooking
  • extra virgin olive oil for drizzling at end
  • (optional) parmesan for topping

Instructions:

  1. Place normal olive oil in wide pan with high sides and add the chilli and garlic. The oil should be warm not hot, so that you don’t burn the chilli and garlic but just infuse the oil.
  2. Add the tomatoes and toss through the mixture.
  3. Add some salt and pepper at this stage and place on high to soften the tomatoes and to start reducing to a thick sauce.
  4. Once the tomatoes have started reducing, place the heat on medium to low, add the basil leaves and wait until they’ve wilted into the mixture.
  5. At this stage you can now mix the cooked pasta through and season with salt and pepper again to taste.
  6. Add some good quality extra virgin olive oil and mix through.
  7. Serve with some parmesan cheese if you prefer and extra cracked pepper.
