Recipe: Chickpea Burger for one

Who wants a boring salad every day for lunch? Certainly not me!
Having Good Friday off and with a little time up my sleeve, I pondered into my stocks and grabbed a can of chickpeas. I thought a nice burger would be great and not impact the calories too much, as the ingredients together don’t add up to much.
Using a couple of spices and blending them altogether, this burger comes out a little sloppy. Add a little water and some breadcrumbs and you don’t need to add an egg! Just mould together in your hand and be very careful when turning, so you don’t break it, and your set for a Chickpea Burger for one!
Serves:
- One – to make for more add more ingredients!
Ingredients:
- 75 grams chickpeas drained from can
- 1/2 tsp djon mustard
- 1/2 tbs lemon juice
- 1/2 tsp tahini
- pinch salt
- pinch pepper
- 1 tsp garlic mince
- 1 tbs breadcrumbs
- pinch paprika
- 1/4 tsp chilli paste
- 2 tsp water
- 1 tsp oil (for frying in pan)
Instructions:
- In the blender place all the ingredients, minus the breadcrumbs and blitz through.
- Mix the breadcrumbs through roughly.
- Mould the mixture in your palms to a thick rissole.
- Fry both sides to golden brown, carefully turning to ensure it doesn’t crumble on a small pan.
- Serve with your choice of bread, salad and sauces.
