After not straying too much with the four bean mix cutlet to the Veganomicon’s version, I had some ideas I really wanted to work on for this version. I have to admit, I wasn’t disappointed!
This chickpea cutlet has much more of a stringy or meaty substance to it plus has a well-rounded flavour of cheese-soyness to it. This one’s definitely worth trying, if you looking for something different - and it’s all vegan!
Serves:
- 4 large schnitzels
Ingredients:
- 240 grams chickpeas
- 2 tbs olive oil
- 1/2 cup gluten flour
- 1/2 cup breadcrumbs (vegan)
- 1/4 cup water
- 2 tbs soy sauce
- 2 tsp garlic mince
- 1/2 tsp spicy paprika
- 2 tbs savoury yeast flakes
- 1/2 tsp basil
- 1 tsp white pepper
- 1/2 tsp onion flakes
- 1 tbs rice flour
- pinch salt
Instructions:
- Mash the chickpeas up with some salt and oil.
- Mix in all other ingredients and sit aside for five minutes.
- Knead the ingredients and split it into four.
- Mould the mixture into cutlet form.
- Drizzle some oil in a pan and fry the cutlets on each side till golden brown before serving.
