Chickpea Cutlet

After not straying too much with the four bean mix cutlet to the Veganomicon’s version, I had some ideas I really wanted to work on for this version. I have to admit, I wasn’t disappointed!

This chickpea cutlet has much more of a stringy or meaty substance to it plus has a well-rounded flavour of cheese-soyness to it. This one’s definitely worth trying, if you looking for something different – and it’s all vegan!

Serves:

  • 4 large schnitzels

Ingredients:

  • 240 grams chickpeas
  • 2 tbs olive oil
  • 1/2 cup gluten flour
  • 1/2 cup breadcrumbs (vegan)
  • 1/4 cup water
  • 2 tbs soy sauce
  • 2 tsp garlic mince
  • 1/2 tsp spicy paprika
  • 2 tbs savoury yeast flakes
  • 1/2 tsp basil
  • 1 tsp white pepper
  • 1/2 tsp onion flakes
  • 1 tbs rice flour
  • pinch salt

Instructions:

  1. Mash the chickpeas up with some salt and oil.
  2. Mix in all other ingredients and sit aside for five minutes.
  3. Knead the ingredients and split it into four.
  4. Mould the mixture into cutlet form.
  5. Drizzle some oil in a pan and fry the cutlets on each side till golden brown before serving.
