Fake Chorizo, Bacon and Potato Pasta

This meal is a take on the Spanish Chorizo, Bacon and Potato tapas.  Using the combination in a pasta with some parmesan is a good combination of protein and carbohydrates.  To allow for a vegan version, use some vegan cheese or omit it altogether.

This version has been lowered in calories by steaming the potatoes before mixing into the vegetarian fake meat combination, however if you not worried about the extra calories, fry off the potatoes before adding to the pasta mix!

Serves:

  • 3 serves

Ingredients:

  • 200 grams organic pasta spirals, cooked
  • 3 vegetarian hot dogs, chopped thinly
  • 2 potatoes, peeled and roughly chopped
  • 2 cups tomato passata
  • 2 tsp sweetener of you choice
  • 3 vegetarian bacon pieces of your choice
  • pinch parmesan
  • 1/2 red onion, diced
  • 2 tsp paprika
  • 2 tsp garlic mince
  • drizzle olive oil

Instructions:

  1. Steam the potatoes in salty water.
  2. Drizzle the oil in the pot and mix thoroughly the onion and garlic into the oil.
  3. Once the onion has softened, mix the vegetarian bacon and hot dog in and fry until brown.
  4. Stir the tomato passata in with the vegetarian meat mix and pour the paprika in.
  5. Simmer the tomato a little before stirring in the potato.  Simmer for 5 minutes.
  6. Mix in some parmesan and add the pasta.  Stir throughly and serve with a little grated parmesan on top.
