Four Bean Mix Cutlet

This delightful recipe is adapted from Veganomicon – if you hadn’t heard of this book, it’s very popular among vegans and worthy of vegetarians and meat-eaters alike taking a look. There’s a lot of great recipes in the book that break the boundaries of vegan foods being plain and boring – these recipes are definitely not!

My steer away from the original recipe involved halving the ingredients and swapping the chickpeas with the four bean mix. Although, it’s quite tasty I think my next attempt I’d change the spices a little bit to suit my tastebuds more!

For those wanting a quick lunch, these are ideal for you! Try putting one in a sandwich with some ketchup and cheese, similar to a schnitzel sandwich!

Four Bean Mix Cutlet

Serves:

  • 2 schnitzels

Ingredients:

  • 125 grams four bean mix
  • 1 tbs oil
  • salt
  • pepper
  • 1.2 tsp garlic mince
  • 1 tsp soy sauce
  • 1/4 tsp paprika
  • 1/4 tsp thyme
  • 1/4 tsp sage
  • 1/8 cup water
  • 1/4 cup gluten flour
  • 2 tbs breadcrumbs

Instructions:

  1. Mash the bean mix until it’s smooth.
  2. Stir through the oil until it’s mixed thoroughly.
  3. Blend in all the other ingredients and sit aside for a couple of minutes.
  4. Knead until its start to get stiff.
  5. Split and shape into schnitzel shapes.
  6. Shallow-fry on a very low heat in some oil until golden-brown each side.
