Recipe: German Potato Salad

How do you make a brilliant potato salad a little average? Overcook or forget your potatoes on the boil! So the photo above is showing the overcooked potatoes, however the sauce is well worth trying out on your properly cooked ones! It’s based on the german salad with some wine vinegar, mustard and onions. Definitely worthwhile trying out, if you’re sick of the traditional mayonnaise potato salad.
Makes:
- 5 serves
Ingredients:
- 5 potatoes
- 3 tbs red wine vinegar
- 1/2 brown onion, diced
- 1 tsp dijon mustard
- pinch salt
- pinch white pepper
- 1 sachet sweetener
Instructions:
- Slice the potoatoes and boil until cooked.
- In a seperate pan, mix all the other ingredients in and saute the onions.
- Mix the ingredients together and allow to cool before serving.

This looks great. Although I am not sure what a sachet sweetener is I am sure I could figure it out!
Any potato salad is awesome in my book!

Thanks Denise, the sweetener is a dieter’s version of sugar. If you’re not worried about the calorie intake, you can use white sugar instead!
