Recipe: Lemon, Spinach & Lentil Soup

We’ve got a whole lot of lemons here at home and rather than waste these. I’m coming up with some unique ways to use these in meals. It uses the whole lemon boiled down to a mushy consistency.
This soup here is definitely unique because of this and also very delicious. Just be careful not to burn yourself when blending the lemons - take it from me who did!
Serves:
- Five cups
Ingredients:
- 1 whole lemon
- 400 grams lentils
- 300 grams frozen spinach
- pinch salt
- 1 onion, diced
- 2 tsp garlic mince
- 3 potatoes diced
- 2 tbs vegetable stock
- pinch pepper
- 2 hot chillies, finely chopped
- 6 cups water
Instructions:
- Empty all ingredients into the pot, adding enough water to cover the lemon.
- Boil for 10 minutes, before taking the whole lemon out.
- Blend the entire lemon down in a vitamiser and add to the soup, mixing thoroughly.
- Simmer for half an hour and serve.

This soup looks fantastic!!! I can’t wait to try it!
(By the way, I love reading your blog; you come up with such wonderful recipes! And I’m vegan, so I appreciate you often including ways to alter your recipes to make them vegetarian/vegan.)

Thanks Katie! I didn’t realise there were so many vegans reading my blog, so I try to make sure I either come up with some vegan dishes or veganize them to assist!
