Recipe: Macaroni and Cheese with Vegetarian Hot Dogs

The same day I made the pesto pasta, I decided to make this scrumptious dish! I thought this would be another easy dish to make and to let sit for reheating whilst coming back from hockey training.
This one is certainly a quick dish to make and sit and go do something else whilst you’re waiting for it to be cooked. It’s also great reheated, so make plenty and enjoy later on in the week or when you can’t be bothered cooking!
Again, I checked out some recipes to get some ideas from, this one is similar to my variation from vegweb.
Serves:
- Three mini casserole dishes
Ingredients:
- 225 grams of macaroni or tubed pasta dried
- 1 tbs olive oil
- 1 tsp wholegrain mustard
- 1/2 cup nutritional yeast flakes
- 1 tsp garlic or sprinkle garlic flakes
- pepper
- pinch salt
- 1/4 cup water
- 1/4 cup milk
- pinch paprika powder
- pinch chilli powder
- 2 tbs SR flour
- 3 sanitarium vegetarian hotdogs, sliced thin
- pinch parmesan (optional)
Instructions:
- Preheat oven to 180 degrees.
- Boil pasta, if not already done so. Add oil and mix.
- Cook hotdogs until brown.
- In a seperate pan, add water and milk to flour and wait till thickened.
- Add the spices and yeast and keep stirring. Mix all ingredients in pan and empty in casserole dishes for oven.
- Optional: Serve with a sprinkle of parmesan on top.
- Cook for 10 mins and serve.
