Recipe: Mashed Potato and Carrot

I bought a whole heap of carrots on the weekend and realised that I needed to use these, so this morning I came up with the idea of making mash out of them! I’m sick of steamed vegies right now - had them every day so this combination was just what I needed today.
A little touch of chilli and white pepper brings a nice warmth to this dish and it was just what I need tonight to serve with my soya-bean sausages which I served with the mash in a white bun. Vegie bangers and mash in a bun - tastes delicious (picture below)!

Ingredients:
- 3 medium potatoes
- 2 medium carrots
- 1 tsp minced garlic
- salt
- white pepper
- 1 tsp coriander dried
- 1 tbs butter (I used low fat margarine)
- chilli
- 2 tbs milk
Ingredients:
- Peel the carrots and potatoes and dice them small to ensure quick cooking.
- Boil the carrots and potatoes in some water with salt.
- Once soft, drain the water.
- Mash down with the butter, pepper, coriander, chilli, salt and garlic leaving the heat on.
- Add the milk to soften the mixture and add more if required.
- Season with more salt, pepper and butter to taste.

oooo the mash looks great
I am big on juicing, so carrots are one thing I always have on hand in quantity.
