Recipe: Refried Bean & Quinoa Loaf

This one’s another simple recipe that involves only a few ingredients, but tastes great! This can either be used as a main meal or inside a sandwich as a burger with some tomato sauce, which I must confess I’m addicted to! Try this with some salad and tomato, but heat the loaf up before placing in your sandwich.
Serves:
Eight large slices
Ingredients:
- 1 cup quinoa uncooked
- 3/4 can refried beans
- 1/2 cup self raising flour
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1 tsp smoked paprika
- 1/2 onion
- 2 tsp garlic mince
- salt
- white pepper
Instructions:
- Preheat oven to 180 degrees celsius/ 356 degrees fahrenheit
- Boil the quinoa in two cups water and place off heat when the water has evaporated.
- Mix in all other ingredients and pour into a baking tray. I’ve used a large width, but you can use a smaller width to allow for height to your loaf.
- Cook in oven for an hour or as required to allow for a springy top. Time could vary with oven heat.

oooo using them as patties does sound really good!

thanks vigilant20, the patties would be ideal! Make sure you warm them up and chuck a little tomato sauce on top, maybe some cheese of some sort if that’s your thing (although it doesn’t need it)….it’s absolutely delish!
