Roasted Vegetable Pasta

Wanting a delicious treat, that is comforting and simple to make?  This dish is certainly for you then!  Simply throw your cut vegetables into an oiled pan and chuck it in the oven until all the vegetables and roasted, melting in your mouth!

To show you how fuss-free this is, I made this meal whilst doing a weights routine in the other room.  The only effort I had was to come back and stir the ingredients together at the end!

Definitely try this one out when you can’t be bothered cooking!

Serves:

  • 3 mains

Ingredients:

  • 2 handfuls button mushrooms
  • half a red pepper
  • half a green pepper
  • 1 stalk broccoli
  • two fresh tomatoes
  • salt
  • 1 tsp garlic or fresh cloves roasted in also
  • 3 serves cooked spaghetti, set aside
  • olive oil
  • good quality of extra virgin olive oi
  • optional - handful of your favourite cheese

Instructions:

  1. Preheat the oven to 180 degrees C or 360 degrees F.
  2. Drizzle a high-walled tray with olive oil.
  3. Roughly chop all the vegetables minus the mushrooms and dump these in the oiled tray.
  4. Sprinkle some salt on top and another liberal drizzle of olive oil.
  5. Dump it in the oven and turn once if you like during a period of 45 minutes to an hour!
  6. Sprinkle the garlic on top and add the pasta to the tray mixing through thoroughly.  If you’d like cheese also, do it at this time.
  7. Put it back in the oven for 5-10 minutes before serving with a drizzle of good quality of extra virgin olive oil on top!
