I have to admit I love this dish. It has everything you want for a meal - crispiness, spice, bite, freshness and flavour all in one.
The use of rocket, a clean extra virgin olive oil and ricotta tricks you into thinking it’s light and you can have it in Summer, but the chilli brings that warmth for making in Winter, either way you could have this all year round!
This is definitely going to be a regular on my vegetarian diet and could be on yours. As for vegans, I’d be quite interested in how you could veganise this one! Any ideas?
Serves:
- 2 - 3 mains
Ingredients:
- 2 handfuls of fresh rocket / arugula
- 2 tbs ricotta
- red onion 60 grams
- 2 vegetarian hot dogs, sliced very thin
- parmesan grated, handful
- salt
- cracked pepper
- 1 fresh chilli slice fine or to your taste
- 1 tsp garlic mince
- 1-2 tbs olive oil for frying hotdogs
- drizzle extra virgin olive oil for serving
- 2-3 serves of pasta of your choice cooked
Instructions:
- Fry the hot dogs in with some oil until crispy and brown. Near the end of this process add the chilli, seasoning, onion and garlic to infuse in.
- Mix in your pasta and some cheese and take off the heat.
- Roughly stir the rocket in and serve between 2-3 bowls.
- With your hands, grab chunks of ricotta and spread on top with a drizzle of good quality extra virgin olive oil and some extra parmesan if you like!
