Recipe: Spicy Eggplant with Vegetarian Mince

I am no fan of eggplant, in fact, you could say that I really dislike the vegie! The thought of eating it usually ends up with me throwing the dish out…but this dish inspired closely adapted from the Buddhist Vegetarian cooking class melts in your mouth and leaves you wanting more.
I kid you not, I am now interested in trying eggplant dishes again after eating and making this dish!
Ingredients:
- 3/4 eggplants sliced into long slices
- 4-5 whole dried shitake mushrooms, soaked and diced
- vegetarian mince - I used 6 vegetarian beef chunks diced small
- salt
- white pepper
- chilli to taste
- 1 tsp mince garlic
- 1 tsp sweetener (I used equal but you can use sugar)
- 2.5 cups water
- 1 tsp sesame oil
- bunch mint, roughly chopped
- drizzle oil
Instructions:
- Shallow fry or grill the eggplant until brown and soft. Remove from pan and leave to sit.
- Add the oil to a pot and mushrooms finely chopped, stirring occasionally.
- Stir the mince in and season with salt, pepper, chilli, garlic and sweetener.
- Once mixed in, pour 1 cup of water in and stir till boiling.
- Stir in the sesame oil and add the remaining water.
- Add more seasoning to taste if required before simmering for five to ten minutes placing a lid on top of pot.
- Place the roughly chopped mint onto the top of the dish and leave with lid on for a couple of minutes.
- Once the mint has wilted, mix it into the dish and serve with rice!

See, you and I are different. I’ll eat an eggplant anyday over fake meat. I like tofu, but all the rest … I abhor the texture even more than the flavor. I’ve just never enjoyed them. But I keep reading your recipes and maybe you’ll convince me someday!

ah, I think I may have been turned though. I’ve always eaten eggplant and dislike the bitter taste. I think what’s happened though is, I’ve never had someone cook it properly - or my taste has changed!
How long have you been vego Rooey? I reckon that may have something to do with you not eating the fake meat?
This would be not bad with tofu that’s been frozen also. The flavours of the eggplant and spices make the dish, not the fake meat.

Two years veggie now. Maybe I don’t miss meat enough yet to appreciate the substitutes?
