Recipe: Spicy Zucchini with Vegetarian mince

This is a variation from the Spicy Eggplant dish available here. The sweet potato was an afterthought but it actually tastes quite good in this dish.
Ingredients:
- 1 medium sliced zucchini
- 1/2 medium sliced sweet potato
- 1 cup sliced mushrooms
- vegetarian mince - I used Sanitarium Vegetarian Mince
- salt
- white pepper
- chilli to taste
- 1 tsp mince garlic
- 1 tsp sweetener (I used equal but you can use sugar)
- 2.5 cups water
- 1 tsp sesame oil
- bunch coriander, roughly chopped
- drizzle oil
Instructions:
- Steam zucchini and sweet potato until soft.
- Add the oil to a pot and mushrooms, stirring occasionally.
- Stir the mince in and season with salt, pepper, chilli, garlic and sweetener.
- Once mixed in, pour 1 cup of water in and stir till boiling.
- Stir in the sesame oil and add the remaining water.
- Add more seasoning to taste if required before simmering for five to ten minutes placing a lid on top of pot.
- Place the roughly chopped coriander onto the top of the dish and leave with lid on for a couple of minutes.
- Once the coriander has wilted, mix it into the dish and serve with rice!
