Recipe: Spring Onion and Leek Vegan Mash

I’ve had a few cravings lately for mashed potatoes, but not wanted to make your ordinary mash, I came up with this velvety cheese and onion flavoured mash.
This mash is vegan if you omit the Parmesan cheese and I’ve made without and it tastes just as good as having it in! To allow for the cheesy taste, place in some more nutritional yeast in!
Serves:
Four
Ingredients:
- four medium potatoes peeled
- salt
- pepper
- 2 tbs nutritional yeast
- 1/2 leek sliced thin
- 1 spring onion sliced thin
- 1 tsp garlic mince
- olive oil for mixing
- (optional) Parmesan cheese shaved
- (optional) extra virgin olive oil for drizzling on top
Instructions:
- Steam the potatoes with salty water.
- Place some olive oil in another pot and place in the leek, garlic and spring onion and saute down until the ingredients are soft.
- Season the sauteed items and set aside.
- When the potatoes are soft, mash the potatoes until silky.
- Season the potatoes and place in a little olive oil and the nutritional yeast to thin out the potatoes. At this stage, you can also add your optional Parmesan cheese or more nutritional yeast for a more cheesy flavour.
- Mix in the sauteed ingredients and a little more olive oil, stirring thoroughly before serving!
