Stuffed Macadamia, Peach & Shitake Vegie Roast

What a treat I have for you today! This delightful stuffed vegetarian roast has a combination of flavours that don’t outplay each other. Although, I didn’t have this as a special occasion, I already think this would be ideal as a Christmas luncheon coming up or what about Easter Sunday or Thanksgiving for the Americans?

In Australia, Sanitarium make these Vegetarian Roast but I’m sure there would be an alternative in most countries! If not, I’ve thought of making stuffed tofu or stuffed gluten instead. It would certainly go well with those also!

Recommendations:

  • The sitting time (mentioned below) is not necessary but ideal to allow the flavour to intensify!
  • Use the middle sections by slicing into smaller parts and encrusting with some of the stuffing - these are delicious too!

Serves:

  • Roast cuts around 16 thin slices (2 per serve)
  • Enough stuffing for 2 roasts (I’ve frozen my other serve for next time!)

Ingredients:

  • 1 (450 grams) Sanitarium Vegie Roast or alternative
  • 250 grams fresh shitake mushrooms
  • 4-5 dried shitake mushrooms, soaked
  • 2 tsp dried sage powder
  • 2 cloves garlic
  • 2 spring onions, chopped thinly
  • salt
  • white pepper
  • 1 tsp vegetable stock powder
  • 135 grams peaches in their natural juices
  • 1 cup raw macadamias
  • 1 slice wholemeal bread

Instructions:

  1. Blend all the ingredients minus the roast together in vitamiser or blender. This may need to be done a little at a time to ensure it all blends down well.
  2. Set aside in the fridge for a least an hour to allow for the flavours to mix in and settle.
  3. Cut the roast in half and then cut a circular hole in the middle of both.
  4. Stuff the roast and let sit for another half an hour.
  5. Preheat oven 180 degrees celsius or 356 fahrenheit.
  6. Place a little oil in the tray and on the roast, cooking for around 45 minutes.
  7. Slice and serve!

Nutrition per serving of two thin slices*:
193 calories, protein 12.4g, carbohydrate 15.7g, fat 9.2g, saturated fat 1.3g, fibre 1.2g, salt 0.478 g

*calories of Sanitarium Vegie roast will be less, a sauce is inclusive of the calories, but it’s not used.
