Recipe: Sweet Ginger and Spelt Bread

I think I may have previously mentioned how I have a bit of an addiction for ginger at the moment. I needed a little fix tonight but didn’t want something overly sweet or fattening, so I came up with this sweet bread.
This would be great with some yoghurt or a dollop of cream.
Ingredients:
- 1 cup spelt flour
- 3/4 cup self raising flour
- 1 tsp baking powder
- pinch salt
- 1.5 tsp egg replacer (I used no egg from Orgran)
- 1/2 cup sugar
- 1.5 cup milk
- 6 pieces crystalised ginger, diced thin
- 3 tbs almond meal
Instructions:
- Preheat oven to 180 degrees celsius.
- Mix all dry ingredients together.
- Add the milk and stir until there are no lumps.
- Mix in the ginger before adding to a tray lined with baking paper.
- Cook for 30 mins or until golden brown on top.
