Recipe: Sweet Ginger and Spelt Bread

I think I may have previously mentioned how I have a bit of an addiction for ginger at the moment. I needed a little fix tonight but didn’t want something overly sweet or fattening, so I came up with this sweet bread.

This would be great with some yoghurt or a dollop of cream.

Ingredients:

  • 1 cup spelt flour
  • 3/4 cup self raising flour
  • 1 tsp baking powder
  • pinch salt
  • 1.5 tsp egg replacer (I used no egg from Orgran)
  • 1/2 cup sugar
  • 1.5 cup milk
  • 6 pieces crystalised ginger, diced thin
  • 3 tbs almond meal

Instructions:

  1. Preheat oven to 180 degrees celsius.
  2. Mix all dry ingredients together.
  3. Add the milk and stir until there are no lumps.
  4. Mix in the ginger before adding to a tray lined with baking paper.
  5. Cook for 30 mins or until golden brown on top.
