Recipe: Vegan-style Fish & Chips

Vegans, you don’t have to miss out on the fish and chips - although there isn’t any fish in this dish at all. How about good old onion rings, potato cakes (or scallops as some people know them as) or hot dogs (saveloys) in batter instead?
This meal isn’t really too hard to do at all, simply cut your vegetables, place some cheap and new vegetable oil in a pan and mix the batter in a large jug to reduce your mess to nothing.
I have made other vegetables before, so feel free to create your own battered vegetable here - that’s what tempura is anyway! Some of these include:
- Whole mushrooms
- Zucchini sliced
- Eggplant sliced
- Tomatoes sliced

Serves:
- The batter will be plenty for five serves or more of vegetables. I washed the rest down the sink!
Ingredients:
- four to five potatoes
- 1/2 sweet potato
- 4 hot dogs (vegan or vego) - can’t find any? here’s my own recipe
- 1 brown onion
- 1 bottle of vegetable oil (for frying in)
Batter
- 3/4 white flour
- 1/4 cup corn flour
- 220 mls soda water
- 1 tbs olive oil
- 1/2 tsp baking powder
- 1/2 tsp white pepper
- pinch salt
Instructions:
- Mix the dry ingredients in a big jug and stir.
- Pour the soda water in gently and only stop when you have no lumps in your batter.
- Slice the potatoes in half and use the middle bit to slice the cakes / scallops. Then slice all the vegetables thinly.
- Place your fries in the microwave and bake half-way to reduce the frying time. Set aside.
- Pour your oil in a pan and heat until boiling. You can test this by place a wooden spoon in the bottom and if it’s starts to sizzle, it’s ready for using.
- Dunk the battered items in, a few at a time, and place into oil.
- Fry until golden brown - turning occasionally to evenly cook.
- Pull them out of the oil with a spatula with holes and place on a plate with absorbent paper to remove the excess oil.
- Repeat until all the battered items are done.
- Leave your fries to last and watch the splatter! After baking, there’s a little water leaking from them.
- Pour all the items into a tray and pour salt over the top. Shake them round and serve!
