Recipe: Vegetarian Cheeseburger Soup

Ever heard of a cheeseburger soup? Well I hadn’t until I found all these recipes on recipeazaar. I wanted something different and I have to admit it certainly is. Strangely though this is quite an exceptional dish and tastes just like the real thing - a cheeseburger!

I’ve had a few people turn their noses up at the thought of this as a soup, but I can guarantee that you will enjoy this soup if you like a casserole or a cheeseburger!

Other alternatives could be created such as adding mustard, mushrooms. It’s entirely up to you!

Ingredients:

  • 2 tbs tomato paste
  • 2 tbs tomato ketchup
  • 1/3 cup grated cheddar cheese
  • jalapeno chillies to taste or heat level
  • pinch salt
  • pinch white pepper
  • 2 tbs white flour
  • 1/3 cup milk
  • 1 can of sanitarium casserole mince or your own vegetarian mince/tvp
  • 1/3 grated carrot
  • 1 tsp dried basil
  • 1/2 red onion
  • 1 tab massell beef style vegetarian stock
  • 1 tbs butter
  • olive oil for sauteeing onions
  • 2 tbs garlic minced
  • 1 -2 cups water

Instructions:

  1. Add some olive oil to your pot and saute the onions with the basil, carrots and garlic.
  2. Once the onions are soft add the water with the beef stock cube.
  3. Add the mince and stir through and wait for the ingredients to boil.
  4. Reduce to simmer and add the butter, tomato paste, tomato ketchup, jalapenos, salt and pepper.
  5. Simmer for 10 minutes, adding more water if required.
  6. At the last minute thicken the sauce with the flour mixed with the milk (to avoid lumps).
  7. Add the grated cheese slowly, to ensure that it combines. Serve with crusty bread!
