Recipe: Warm Four Bean & Hot Dog Salad

This warmed salad of vegetarian hotdogs and legumes is cooked without oil! How? I soaked these items in a small pan with red wine vinegar and slowly cooked on a low heat. The vinegar reduces down and the hotdogs and legumes are screaming with flavour!
After making this dish though, I’d recommend using the gourmet lettuce leaves for this. Not only is the standard lettuce unattractive in this dish, but also tasted very bland. Using something like baby spinach, rocket or mixed gourmet would really well.
Serves:
- 1 serve
Ingredients:
- 1 vegetarian hot dog
- 60 grams legumes of your choice
- 30 grams fetta crumbled
- 1/2 tsp garlic mince
- 2 tbs red wine vinegar
- 1/2 handful of your fresh choice of fresh herbs, chopped fine (I used lemon basil, chives, parsley & oregano)
- 1 cup lettuce chopped into mouth-size pieces
- 1 small tomato, chopped into small pieces
- seasoning of salt & white pepper
Instructions:
- Slice the hot dog up into thin slices and place into a small pan with the garlic and legumes.
- Pour in the vinegar, season and cook slowly on a low heat, until the vinegar has reduced down.
- Place the herbs through at this stage to warm through, leaving for another minute to cook.
- Place the lettuce and tomato in the bowl and drop the hot dog mixture on top.
- Crumble the fetta through and using your hands, mix the fetta through the dish.
