Spicy Cottage Cheese Breakfast

a delicious alternative for breakfast and quite filling!

| 2 | slices whole wheat bread, sliced thin |
| 3 | tablespoons light cottage cheese (I use weight watchers) |
| 1 | tablespoon sambal oelek |
| 1/2 | teaspoon Splenda granular (optional) |
| 1/2 | small tomato |
- Mix cottage cheese with sambal oelek and splenda. Splenda will make this a little sweet if it’s too plain for you.
- Slice tomato and place on bread. Top with cottage cheese mixture.
- Toast until brown.
