spicy potato bravas - vegan style

I just made this today for lunch. It’s quite healthy and fairly low on calories. Worth making when you want something hot and spicy!
Use fresh chillies if you like and add some fresh coriander for some extra spice!
Apologies for the photo quality, it was taken with my XDA and not my real camera…
Ingredients:
- 1 medium potato, diced roughly with skin
- 2 rashers Sanitarium vegetarian bacon, sliced thin
- 1/4 red onion, diced roughly
- 2 cloves garlic, diced roughly
- 1 tbs chopped chives
- pinch chilli flakes
- pinch salt
- pinch pepper
- lemon juice
- 1 tbs extra virgin olive oil
Calories:
- 330 calories
Serves:
- One
Instructions:
- Bake potato (diced) in microwave.
- Add chives, bacon, onion and garlic in saucepan with oil. Saute lightly.
- Combine potato in saucepan and add spices.
- Sprinkle lemon on top for a tang!
