Stuffed Mushrooms

You’ll have to get in quick with these little babies, unless you want to find that there’s none left for you at a Barbecue!  Not only are they delicious but they are SO easy to make!  Simply take out the stalk, slice it up and mix in your stuffing.  Place it on top and chuck it on the grill or in your oven and VOILA! Instant satisfaction!

Makes:

  • based on 6 mushrooms

Ingredients:

  • 6 portobello mushrooms, stalks removed and sliced
  • luncheon smoked and diced (or use a meat alternative near you)
  • sprinkle vegan parmesan cheese
  • porcini olive oil – for drizzling on top
  • 1 slice day-old bread, blitzed for breadcrumbs
  • pepper
  • 1/4 tsp garlic
  • salt
  • normal olive oil for the tray

Instructions:

  1. Preheat the oven to 180 degrees C or 370 F.
  2. Drizzle some basic olive oil onto a tray and place your mushrooms flat-side up.
  3. Combine the luncheon, bread, garlic, mushroom stalks, parmesan and seasoning.
  4. Drizzle the porcini oil through the stuffing and layer on top of the mushrooms.
  5. Drizzle with a little more porcini oil and extra parmesan (optional).
  6. Place in the oven for 10 minutes or until soft.
  7. Serve with a extra drizzle of oil and salad.
