Last week was a pretty hectic week for me and although I’ve not really felt like cooking everyday, I had a couple of great days of feeling inspired.

One particular moment included adapting the recipe of chickpea flour pasta from The Modern Vegetarian Kitchen to come up with a lovely fresh pasta dish with leeks and mushrooms. Just thinking about it is making me salivate now!

I’ve also had an adaption to the Weiner Schnitzel from a couple of weeks ago to make a Cordon Bleu and combined some leek to make a vegan mash that is to die for. Trust me, it’s worth making!
